Delicious Cakes to Celebrate Reunification Day
THE HANOI TIMES — As Vietnam gears up to commemorate the 50th anniversary of Reunification Day on April 30, 2025, the country is abuzz with excitement. Parades, performances, fireworks, and official ceremonies will mark this momentous occasion, and local bakers are adding their own sweet twist to the festivities.

Vietnamese bakers are whipping up a storm in their kitchens, creating “patriotic cakes” that not only tantalize the taste buds but also showcase their love for their country. These treats are a delightful fusion of flavor and artistry, and they’re taking social media by storm.
One such baker, Le Thu Trang from Hanoi, has crafted a masterpiece. Her cake features a detailed outline of Vietnam’s map on top, with a chewy taro, pork floss, and salted egg yolk filling. Shaping the cake, especially the intricate map, requires precision and patience, as Trang slowly presses the mold to ensure all the lines remain intact.

Trang’s creation also includes the Dong Son bronze drum pattern, a symbol of Vietnam’s ancient cultural heritage. Meanwhile, Do Thu Ngoc, a teacher in Hanoi, puts a patriotic spin on the traditional phu the (married couple) cake. She dyes the crust a vibrant red using gac fruit, fills it with classic mung bean, and tops it with a five-pointed yellow star, mirroring the Vietnamese flag.
Ngoc’s cakes went viral as soon as they hit the internet, with netizens applauding not just their visual appeal but also the deeper message they convey: a celebration of national pride and unity. The enthusiasm for these cakes is contagious, with Ngoc sharing her treats with friends at a coffee shop, spreading joy and sweet flavors.

Another talented baker, Nguyen Thi Thuy Duong, from Hanoi’s Thanh Xuan District, takes us back in time with her cake. She recreates the iconic moment when a tank smashed through the gates of Saigon’s Independence Palace on April 30, 1975. Duong’s attention to detail is remarkable, with candy replicas of the multicolored flag of the National Liberation Front of South Vietnam and a section of the palace fence. The tank-shaped chiffon cake is covered in buttercream, making it a tasty treat.
“It only took me about an hour to make, but it holds a world of meaning,” Duong shared. “It’s my humble tribute to the generations who sacrificed their youth, dreams, and lives for the peace and freedom we now enjoy.”

Social media platforms are buzzing with bakers like Hoang Nguyen Lan Nhi, who finds inspiration in both Japanese wagashi and Vietnamese heritage. Her bite-sized cakes are adorable and feature iconic symbols such as Uncle Ho’s green army hat, the Vietnamese flag, bamboo branches, and white birds soaring in peaceful skies.
“These cakes are a reminder of our country’s journey,” Nhi shared. “The sweetness, paired with the bold red of patriotism, is our silent tribute to our ancestors.”
Whether it’s through innovative flavors, artistic designs, or historical references, these bakers are elevating the art of pastry making. Their creations are a delicious celebration of Vietnam’s culture, history, and national pride.
